This quick and refreshing Waldorf Salad combines crisp fruits, crunchy veggies, and creamy dressing for a timeless dish that’s perfect as a side or light meal. 


Ingredients

For the Salad:
½ cup walnuts, roughly chopped
2 cups Earthbound Farm Organic Chopped Romaine
1 cup celery, thinly sliced
1 cup red seedless grapes, halved
½ medium tart apple, diced

For the Dressing:
2 tablespoons mayonnaise
2 tablespoons Greek yogurt
1 tablespoon white wine vinegar
½ teaspoon Dijon mustard
1 tablespoon fresh tarragon, finely chopped


Directions

Toast the walnuts in a dry skillet over medium heat for 3-4 minutes, stirring occasionally, until golden and fragrant. Remove from the pan and let cool.

In a small bowl, whisk together the mayonnaise, Greek yogurt, white wine vinegar, Dijon mustard, and tarragon. Season with salt and pepper to taste.

In a large mixing bowl, combine the romaine, celery, grapes, apples, and half of the toasted walnuts. Pour the dressing over the salad and toss gently to coat.

Serve the salad on individual plates and top with the remaining walnuts. Enjoy immediately!
