Ingredients

Salad:
6 oz Earthbound Farm Organic Shredded Carrots
2 green onions, finely sliced on the diagonal
1/4 cup fresh parsley, finely chopped
1 handful of dried cranberries

Dressing:
1 1/2 teaspoons Dijon mustard
1 tablespoon mayonnaise
1 tablespoon honey
2 tablespoons fresh lemon juice
4 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper


Directions

1. In a large mixing bowl, combine the shredded carrots, sliced green onions, chopped parsley (if using), and dried cranberries. Toss gently to mix.

2. In a mason jar or a small bowl, combine the Dijon mustard, mayonnaise, honey, fresh lemon juice, extra virgin olive oil, salt, and black pepper.

3. Shake the jar vigorously or whisk the ingredients in the bowl until well emulsified and smooth.

4. Pour the dressing over the shredded carrot mixture. Toss everything together until the carrots are well coated with the dressing.

5. Serve the salad immediately for a fresh crunch or cover and chill in the fridge for about 30 minutes to allow the flavors to meld. Enjoy as a side dish or a light meal!
