Roasted Sweet Baby Broccoli with Whipped Tahini and Hazelnuts

This elegant yet simple roasted vegetable dish brings out the sweet, earthy flavor of baby broccoli with a golden roast, a creamy tahini drizzle, and a touch of nutty crunch. Perfect as a side for a Mediterranean-inspired meal or a plant-based main, this dish is packed with flavor and nutrients.


Ingredients

10 oz Earthbound Farm Sweet Baby Broccoli
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
2 tablespoons hazelnuts, toasted and crushed
¼ lemon, for squeezing

Whipped Tahini Drizzle:

2 tablespoons tahini
1 tablespoon water, plus more as needed
1 teaspoon fresh lemon juice
½ garlic clove, minced
Salt, to taste


Directions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Spread the baby broccoli on the baking sheet. Drizzle with olive oil and season with salt and pepper, tossing to coat evenly. Roast for 12-15 minutes, or until the stems are tender and the edges are crisp and golden.
  3. In a small bowl, whisk together the tahini, water, lemon juice, minced garlic, and a pinch of salt. Adjust the consistency by adding water 1 teaspoon at a time until smooth and pourable. Taste and adjust seasoning with more lemon or salt if desired.
  4. Arrange the roasted baby broccoli on a serving platter. Drizzle the whipped tahini over the broccoli, then sprinkle with crushed hazelnuts. Squeeze the juice of ¼ lemon over the top just before serving for brightness.
