This hearty and nutritious salad combines tender roasted sweet potatoes, juicy chicken, creamy feta, and crunchy almonds over a bed of fresh Spring Mix. Finished with a tangy balsamic dressing, it’s a perfect meal for two, balancing flavors and textures beautifully.


Ingredients

5 oz Earthbound Farm Spring Mix

1 medium sweet potato, peeled and diced into cubes

1 cup cooked chicken breast, sliced

1/4 cup crumbled feta cheese

2 tbsp sliced almonds, chopped

2 tbsp olive oil (for roasting sweet potatoes)

Salt and pepper to taste

 

For the Balsamic Dressing:

3 tbsp balsamic vinegar

2 tbsp olive oil

1 tsp Dijon mustard

1 tsp honey

Salt and pepper to taste


Directions

Preheat the oven to 400°F. Toss the diced sweet potatoes with 2 tbsp olive oil, salt, and pepper, and spread them in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and golden brown. Let cool slightly.

In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until smooth.

In a large bowl, add the spring mix. Top with roasted sweet potatoes, sliced chicken, crumbled feta, and toasted almonds. Drizzle the balsamic dressing over the salad and toss gently to combine.

Divide the salad into two bowls or plates and serve immediately.
