Grilled Zucchini and Corn Arugula Salad

This vibrant Wild Red Arugula Salad with Grilled Zucchini, Feta, and Corn is a perfect blend of fresh, peppery greens, smoky grilled vegetables, and creamy feta cheese. Ideal for summer barbecues or a quick, healthy lunch, this recipe is sure to become a favorite.


Ingredients

For the Salad:

4 cups Earthbound Farm Wild Red Arugula

2 medium zucchinis, sliced 

1 cup corn kernels (fresh or frozen)

½ cup crumbled feta cheese

2 tablespoons olive oil (for grilling)

Salt and pepper to taste

 

For the Dressing:

¼ cup extra-virgin olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon Dijon mustard

1 garlic clove, minced

Salt and pepper to taste


Directions

Preheat your grill to medium-high heat. Lightly brush the zucchini slices with olive oil and season with salt and pepper. Grill the zucchini for 3-4 minutes on each side until tender and slightly charred. Set aside to cool.

If using fresh corn, blanch the kernels in boiling water for 2-3 minutes, then drain and let cool. If using frozen corn, simply thaw and set aside.

In a small bowl, whisk together the extra-virgin olive oil, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper to taste.

In a large salad bowl, combine the Wild Red Arugula, grilled zucchini, and corn kernels. Drizzle the salad with the prepared dressing and toss gently to combine. Sprinkle crumbled feta cheese over the top and give the salad one final toss. Serve immediately, and enjoy!
