Ingredients

5 oz Earthbound Farm Sweet Chard and Little Gem Crunch blend
Half of a red onion, thinly sliced
1 cup cherry tomatoes, halved
2 plums, pitted and cut into wedges
8 oz halloumi cheese, sliced into medallion

Herby Greek Yogurt Dressing:
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1 tablespoon olive oil
1 garlic clove, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh chives
Salt and freshly ground black pepper, to taste


Directions

Heat a non-stick skillet over medium-high heat. Add the halloumi medallions and fry for 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and set aside.

Add the Sweet Chard and Little Gem Crunch blend to a bowl. Top with the red onion, cherry tomatoes, and plums.

In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, white wine vinegar, and olive oil until smooth. Stir in the minced garlic, chopped parsley, dill, and chives. Season with salt and freshly ground black pepper to taste.

Drizzle the white herby dressing over the salad and toss gently to coat all the ingredients.
Arrange the fried halloumi medallions on top of the salad.
