Crispy Parmesan Panko-Crusted Brussels Sprouts

These crispy, golden-baked Brussels sprouts make a fantastic appetizer or side dish. Perfect for your next gathering or as a tasty snack!


Ingredients

12 oz Earthbound Farm Organic Brussels Sprouts, halved

¼ cup all-purpose flour

2 large eggs, beaten

¾ cup Panko breadcrumbs

¼ cup grated Parmesan cheese

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Zest of ½ lemon, for garnish

Additional grated Parmesan, for serving

Lemon wedges, for serving (optional)


Directions

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Place the halved Brussels sprouts in a large bowl. Add the flour, tossing to coat the sprouts evenly.

Dip each floured Brussels sprout into the beaten eggs, then coat thoroughly in the Panko mixture (Panko, Parmesan, garlic powder, salt, and pepper).

Place the coated Brussels sprouts on the prepared baking sheet in a single layer.

Bake for 10-15 minutes, flipping halfway through, until the Brussels sprouts are crispy and tender.

Remove from the oven and garnish with lemon zest and extra grated Parmesan. Serve warm with a lemon wedge on the side, if desired, or your favorite dip.
