Cauliflower Arancini with Sausage

A modern twist on the classic Italian appetizer, these cauliflower arancini are packed with savory sausage, melty mozzarella, and crispy panko coating. Perfect for a snack, appetizer, or light meal!


Ingredients

1 lb ground sausage
9 oz Earthbound Farm Organic Rice Cauliflower
2 tbsp marinara sauce
Dash of water
1 cup shredded mozzarella cheese
3/4 cup panko breadcrumbs (plus extra for coating)
2 large eggs (divided)
Cooking spray


Directions

Heat a skillet over medium heat and cook the sausage until browned and fully cooked. Add the riced cauliflower, marinara sauce, and a dash of water, stirring to combine. Cook for 3-4 minutes until the cauliflower is tender. Stir in the mozzarella until fully melted and incorporated. Remove from heat and let cool slightly.

Transfer the sausage and cauliflower mixture to a bowl. Add 3/4 cup panko breadcrumbs and 1 egg, mixing until the mixture holds together when pressed.

Scoop about 2 tablespoons of the mixture and roll into balls. Repeat until all the mixture is used.

In a small bowl, beat the remaining egg. Place additional panko breadcrumbs in a separate bowl. Dip each ball into the beaten egg, then roll in the breadcrumbs to coat evenly.

Preheat the air fryer to 400°F. Arrange the coated arancini in a single layer in the air fryer basket, leaving space between each. Spray lightly with cooking spray. Air fry for 9 minutes, or until golden brown and crispy.

Serve hot with additional marinara sauce for dipping, if desired.
