Air-Fried Salmon and Avocado Salad

A fresh and flavorful meal that’s both healthy and satisfying. Topped with a tangy lemon dressing, this nutrient-packed salad is perfect for a quick lunch or a light dinner.


Ingredients

For the Salad:

4 salmon fillets (about 6 ounces each)

1 tablespoon olive oil

Salt and pepper to taste

4 cups Earthbound Farm Organic Baby Romaine 

2 ripe avocados, sliced

2 large carrots, peeled into ribbons

1 lemon, zested into thin strips

 

For the Dressing:

¼ cup extra-virgin olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste


Directions

Preheat your air fryer to 400°F (200°C). Rub the salmon fillets with olive oil and season with salt and pepper. Place the salmon in the air fryer basket, skin side down, and cook for 8-10 minutes or until the salmon is cooked through and flakes easily. Once cooled slightly, shred the salmon into large chunks using a fork.

In a large salad bowl, combine the baby romaine, avocado slices, carrot ribbons, and shaved lemon peel. Gently toss the salad ingredients together.

In a small bowl, whisk together the extra-virgin olive oil, lemon juice, honey or maple syrup, and Dijon mustard. Season with salt and pepper to taste.

Add the shredded salmon to the salad and drizzle with the prepared dressing. Toss gently to combine and serve immediately.
