This quick and savory recipe brings out the best of seasonal flavors, combining the freshness of roasted snap peas with a smooth pumpkin dip. Topped with crunchy pistachios and rosemary, this dish is perfect for cozy fall gatherings or as a flavorful snack.


Ingredients

For the Roasted Snap Peas:

6 oz Earthbound Farm Organic Snap Peas

1/2 tbsp olive oil

1/4 tsp sea salt

1/8 tsp black pepper

1/8 tsp garlic powder

For the Pumpkin Dip:

1/2 cup pumpkin purée

1/4 cup Greek yogurt 

1/2 tbsp maple syrup

1/4 tsp ground cinnamon

A pinch of nutmeg
Salt to taste

1 tbsp chopped pistachios

1/2 tsp fresh rosemary, finely chopped


Directions

Preheat the oven to 400°F.

In a bowl, toss the snap peas with olive oil, sea salt, pepper, and garlic powder. Spread the snap peas in a single layer on a baking sheet and roast for 10-12 minutes, stirring halfway, until they are tender and slightly crisp.

In a small bowl, whisk together the pumpkin purée, Greek yogurt, maple syrup, cinnamon, nutmeg, and salt until smooth and well combined. Transfer the dip to a serving bowl.

Sprinkle the chopped pistachios and fresh rosemary over the pumpkin dip. Serve the roasted snap peas on the side for dipping.
