Spinach and Feta Egg Bake

These individual spinach and egg feta bakes are perfect for a cozy breakfast or brunch. Earthbound Farm Organic Baby Spinach adds a nutritious base, while creamy feta and eggs create a satisfying dish.


Ingredients

5 oz Earthbound Farm Organic Baby Spinach

4 large eggs

1/4 cup feta cheese, crumbled

1 tbsp olive oil

1/4 cup heavy cream or milk (optional for creaminess)

Salt and pepper to taste

1/4 tsp red pepper flakes (optional, for heat)


Directions

Preheat the oven to 375°F. Grease two small ramekins with olive oil or cooking spray.

Heat the olive oil in a skillet over medium heat. Add the baby spinach and cook for 2-3 minutes until wilted. Remove from heat and divide the cooked spinach evenly between the two ramekins.

Crack two eggs into each ramekin, placing it over the spinach. If you want a creamier texture, pour 2 tablespoons of cream or milk into each ramekin. Sprinkle the crumbled feta evenly over both ramekins and season with salt, pepper, and red pepper flakes if using.

Place the ramekins on a baking sheet and bake for 15-18 minutes, or until the egg whites are set but the yolks are still slightly runny (bake longer for fully cooked yolks).

Remove from the oven and let the ramekins cool for a minute before serving. Enjoy directly from the ramekins with toast or a side salad!
